I've been enjoying this coffee as a pour-over brew since roasting for this review. City+ roasts brew up a really sweet cup, a bit two-dimensional at first, but one that opens up to tasty fruited suggestions after cooling off a bit. The aroma has potent sweetness of cooked sugars, honey, with a note of fruit pastry filling. The sweetness in the cup is complex, like the rustic side of palm sugar, and molasses, and woodsy aroma. The coffee opens up to fruit accents of berry tea, dried dates, with notes of bitter fruit skins in the aftertaste. Acidity is on the side of tartaric and grape-like, and finishing flavors nod to aromatic spice and leather. Full City roasts offer a delicious fruited chocolate flavor that reminded me of chocolate-covered dried fig. Body was immense in both our light and dark roasts (City and Full City, respectively), and while somewhat rounded off, there was still fruited vibrance at Full City.
